  28. \item Melt 2 tbsp butter in 5 quart Dutch oven on medium heat.
  29. \item Gently cook onion until translucent. Add garlic and tomato
  30. paste, mix well and allow tomato paste to darken slightly.
  31. \item Add brandy, allowing alcohol to cook out. Stir well to loosen
  32. anything stuck to the bottom.
  33. \item Add in bay leaf, thyme, soup bones and stock. Bring to a
  34. rolling boil for 10 minutes and reduce to a simmer for at least 2
  35. hours.
  36. \item 30 minutes before adding onions to stock, soak in well-salted
  37. water.
  38. \item After onions have soaked, remove soup bones from stock and add
  39. well-drained onions.
  40. \item Bring to rapid boil for 10 minutes, reduce heat to simmer and
  41. allow to simmer for 2-3 hours, or until onions are
  42. well-caramelized.
  43. \item Serve soup piping hot and garnished with homemade croutons and
  44. shredded Gruy\`ere cheese.

  48. \item Preheat oven to 400F.
  49. \item Cut baguette into \half-inch slices.
  50. \item Butter each side of slices, seasoning with salt, pepper and
  51. garlic powder to taste.
  52. \item Arrange on parchment-lined baking sheet, bake in oven 25
  53. minutes, or until golden brown.
  54. \item Remove and allow to cool slightly.
