org.texi: More rewriting

* org.texi (Export back-ends): Rename from "Export formats".
(The Export Dispatcher, Export settings): Minor rewrites.
(ASCII/Latin-1/UTF-8 export): Update variable's name.
(In-buffer settings): Add #+HTML_HEAD_EXTRA.

Thanks to Thomas Dye for these suggestions.
